Rye flour: what it is, why it needs sourdough, and the loaf it makes
Rye is not dark wheat. It is a different cereal, and it does not build a gluten network. Almost everything you learned about kneading, folding and waiting for the dough to double simply does not apply here.

Sources disagree. Protein is the most useless number on a bag of rye. German Type 1150 sheets declare between 7.6% and 8.9%; a two-year Polish study measured 5.3% to 7.9% in sifted flours; wholemeal goes past 10%. The range is wide and, worse, it predicts almost nothing, because that protein never becomes a gluten network. What actually predicts the result is the falling number, which measures amylase activity, and virtually no retail bag prints it.

Method
- The day before, mix the 100 g rye, 100 g water and the starter. Cover and leave 12 to 16 hours at 22 to 24 °C, until bubbly and clearly sour. That acidity is not about flavour: it is what stops rye's own enzyme from taking the starch apart in the oven.
- Add the whole levain, both remaining flours, the 260 g of water and the salt. Mix 4 minutes, just until homogeneous. Do not knead: rye builds no gluten network, and kneading constructs nothing.
- The dough will look like wet clay, sticky and with no elasticity. That is the correct state. Smooth the surface with a wet scraper.
- Bulk ferment 60 minutes at 26 °C.
- Transfer to a greased 22 cm tin, press out air pockets and smooth the top with a wet hand.
- Final proof 60 to 90 minutes. The readiness signal in rye is not volume: it is the surface starting to open into fine cracks.
- Bake at 250 °C for 15 minutes with steam, then drop to 200 °C for another 45 to 50 minutes, until the centre reads 96 to 98 °C.
- Turn out and wait 24 hours before cutting. This is not fussiness: a rye crumb only finishes setting once it is fully cold, and cutting early gives you a gummy slice.
What it is for
Dense, moist tin bread: German Mischbrot and Vollkornbrot, pumpernickel, Scandinavian black bread. Bread that keeps: a well-made rye is still good on day five, and it is the only bread category where that is the rule rather than the exception.
In small doses, 10% to 20% of total flour, it goes into an ordinary wheat loaf for colour, flavour and shelf life without hurting the structure.
And it is the best flour in the world for feeding a sourdough starter. It ferments faster than wheat because it carries more free sugars and more enzyme activity.
When not to use it
Anything that relies on a gluten network to inflate: baguette, ciabatta, croissant, brioche, panettone. It is not that it gets hard, it is that the physics is absent. Rye does have gliadins and glutenins, but the pentosans in the grain form a gel that keeps the proteins from linking into a continuous network. No network, no large open alveoli.
And no kneading. Kneading rye dough is wasted work, and it warms the dough and makes it stickier into the bargain.
How to use it
Three rules cover 90% of the mistakes.
First: acidify. Any high-rye dough needs sourdough, and not for flavour. Rye's amylase works in exactly the temperature band where rye starch gelatinises, so it takes the starch apart inside the oven and you pull out a loaf with a gummy crumb. Low pH inhibits part of that enzyme. As a bonus, acidity improves pentosan swelling, and it is the pentosan gel that holds water and structure in the absence of gluten.
Second: read the surface, not the volume. Rye dough does not double. It is ready for the oven when the top starts to crack.
Third: wait. Cut it the next day. The crumb sets as it cools, and that is the difference between a good slice and a pasty one.
On water: measured absorption runs from 59% to 68.6%, higher the wholer the flour. But the dough will feel slack at any value, because it has no elasticity to give you the sensation of firmness.
The story
Rye came into agriculture through the back door. It was never domesticated on purpose: it arrived as a weed in wheat and barley fields, surviving by mimicry, imitating the crop closely enough to escape the weeding hand. Isolated grains of weed rye turn up in Central Europe from the early Neolithic onwards.
What changed its status was climate. Where the winter was too hard and the soil too poor for wheat, the weed was the only thing still giving a harvest. Finds increase through the Bronze Age and the Iron Age, and that is when rye stops being a pest and becomes a crop in its own right. It became bread because it was what was left.
This explains the geography of rye bread to this day: Germany, Poland, the Baltics, Scandinavia, Russia. That is not cultural preference, it is an agronomic limit. It also explains why dark bread carried the reputation of poor people's food in northern Europe for centuries, the exact same reputation white wheat bread had on the other side of the continent.

- Can I make rye bread with commercial yeast?
- Yes, if rye is the minority. Up to around 30% of total flour, commercial yeast copes fine. Above that, without acidity you run a real risk of a gummy crumb, because rye's enzyme keeps working inside the oven.
- Does rye flour contain gluten?
- It does, and it is not safe for coeliacs. Rye contains secalins, proteins from the same family as wheat gliadins, and they trigger the reaction. What it lacks is the ability to form an elastic network, which is a separate question.
- Why is my rye bread gummy inside?
- Almost always one of three things: not enough acidity, the bake cut short, or a knife before 24 hours. Check the internal temperature, which has to reach 96 to 98 °C, and only cut the following day.
- Which rye flour should I buy?
- If your shop uses the German system, Type 1150 is the workhorse and accounts for about half of all rye flour produced. In countries with no type system, choose between light and wholemeal: light is easier and less sticky, wholemeal gives more flavour and wants more water and more oven time.
