Vital wheat gluten: what it is, how much to add, and the water it asks for

The shelf sells it as vital wheat gluten flour. It is not a flour: it is the protein of wheat, washed out of a dough, dried and ground. It puts back the gluten a dough is missing, at 1% to 4% on the flour.

Sources disagree. Sources put the protein anywhere from 73% to 86%, and that is arithmetic, not disagreement. The Codex fixes its 80% minimum on a dry basis; the supermarket label declares the product as it sits, with 6% to 8% water inside, and reads 75% or 76%. The Codex also converts nitrogen by 6.25 while isolate sheets use 5.7. Same product, three rulers.

What it is for

Whole wheat bread is where it earns its place, and it has the most direct experimental support: in a published trial, 4% and 5% (the study measures frozen dough) on the flour gave the most stable whole wheat samples. The general range for yeast doughs is 1% to 4%, climbing to 12% in high fibre breads.

The bread machine is the second American use: it runs a fixed cycle and cannot feel a slack dough, so reinforcing the flour beforehand builds that margin into the formula.

The third is low carb baking, where gluten stops correcting and becomes the main ingredient: it can become the largest single ingredient. Those formulas are another craft, and their doses do not carry into a loaf.

When not to use it

Coeliac disease and gluten sensitivity: this is the worst product on the shelf, and there is no gentle version of that sentence. The Codex sets gluten free at up to 20 mg of gluten per kilo, and vital wheat gluten sits around 750,000. Coeliac disease is autoimmune, and the only treatment is removing gluten.

It is also not a protein supplement, whatever the nutrition panel suggests. It was built as a dough ingredient, and the way to judge it is what it does to a crumb.

How to use it

Start at 1% to 4% on the flour weight, and treat 4% as the ceiling unless the loaf is high in fibre. Every 1% lifts the protein of the mix by about 0.6 of a point, so the 4% in the loaf below turns a 13% whole wheat flour into a mix that behaves like 15.4%.

Then pay the water. Every 1% asks for about 1.5 points more hydration, so 4% means 6 points you have to put back. The loaf here runs at 84% total liquid against the 78% of a lean whole wheat version. One caveat: milk is not water. Whole milk is around 87% water, so effective hydration lands nearer 78%, which means the milk solids ate the whole gain the gluten asked for, and swapping it for water gives a slacker dough.

One gesture decides the rest: mix the gluten into the flour while both are dry. It hydrates instantly, and alone in water it seizes into a lump that never dissolves. Then give it time with the liquid before the real kneading.

The story

You can do it at your own sink: make a dough, wash it under running water until the starch leaves, and what stays is a grey elastic lump of pure gluten. Chinese Buddhist kitchens were doing that by the year 535. Seitan is the same thing under a much younger word, coined in Japan in 1961.

Industry washes the same way at scale, in the Martin process, which goes back to around 1835.

What decides whether the powder is worth anything is the drying, and it happens below 55 °C. Above that the protein denatures and the network never forms again: you have devitalized wheat gluten, still protein, useless in a dough. The American regulation calls the good version dried gluten that has kept its elastic properties, which means this is a product that can be dead without looking it. Buy where the stock moves.

Is vital wheat gluten flour the same thing as vital wheat gluten?
Same product. The Codex fixes the legal name as vital wheat gluten or wheat gluten, and Bob's Red Mill labels it that way; the flour is shelf language, added by retailers like Kroger and Fry's. And gluten flour alone is worse: it also names high gluten flour, ordinary wheat at 13% to 14% protein.
Can I turn all purpose flour into bread flour by adding it?
You buy the points: about 0.6 of a point of protein per 1%. The quality of that protein you cannot buy: a study of 46 commercial samples from six suppliers found that neither protein content nor the gliadin to glutenin ratio predicted how they baked. Nobody has published the alveograph comparison against a native strong flour either, so anyone quoting the exact difference is guessing.
Why is there no W value in the table?
Because the alveograph is a flour test: it inflates a sheet of dough until it bursts, and a pure protein gives it nothing to grip. Same for farinograph stability. What separates one batch from another is how much water it takes up, and the reference test is still baking a loaf.
Does it go off, and how would I know?
Sealed and dry it keeps a long time, and that is the trap: heat kills the function without touching the colour or the smell. There is no standard vitality index either, because the norm defines vitality by behaviour and gives no method.
